Chicken Soup: The amino acid cysteine, released from chicken during cooking, chemically resembles the bronchitis drug acetylcysteine.
It is believed that the acetylcysteine liberates cysteine which, when available to the liver, enables the biosynthesis of glutathione.
This was confirmed in the multicentre European BRONCHUS trial where 523 COPD patients were randomly assigned to acetylcysteine or placebo groups (Aboussouan 2008).
