applejack, brandy made by distilling hard cider or fermented apple pomace. Another method of making applejack, now rarely used, is to let fermented cider freeze and then to remove the ice. It was one of the most popular drinks among the early settlers of North America and remained so for a long time in rural areas. applejack [′apĀ·əl‚jak] (food engineering) An alcoholic beverage produced from hard cider by lowering its temperature so that much of the water freezes and precipitates as ice and the remaining liquid contains a higher percentage of alcohol.
