Bevier, Isabel (1860–1942) home economist; born near Plymouth, Ohio. She conducted nutritional research and on the faculty of the University of Illinois (1900–21) helped develop the new field of home economics along scientific rather than utilitarian lines. She became nationally known through such works as Home Economics in Education (1924).
