canola oil [kə′nōl·ə ‚ȯil]
(food engineering)
An edible vegetable oil derived from rapeseed that is low in saturated fatty acids (less than 7%), high in monosaturated fatty acids (60%), and high in polyunsaturated fatty acids (30%).
