To meet the demands of growth and homeostasis, living systems frequently acquire metals from particles using some combination of chemical reduction and direct chelation (Currie and Briat 2003).
The process employs chemical reduction to clean castings, which are submerged in a salt bath as a negative charge is applied.
Both a-lactalbumin and b-lactoglobulin can be extensively polymerized by transglutaminase when they are partly unfolded by the chemical reduction of the disulfide bridges stabilizing their tertiary structure, or by performing the reaction at alkaline pH.
