Coconut Milk 

the fluid in the cavity of the immature coconut of the coconut palm. Five to six months after the tree flowers, up to 0.5 liter of a sourish-sweet fluid (coconut water) accumulates in the cavity of the forming fruit; this water can be used to quench thirst. As the nut ripens, the fat content of the fluid increases, and it is converted to an emulsion similar to cow’s milk and used as such in the diet of the local population. Coconut milk contains about 27 percent fat, 6 percent carbohydrates, and 4 percent protein.
