Dragée
a small, rounded candy with a smooth and shiny surface. It consists of a center and surrounding layers of coating. The center is made from a confection (caramel, jelly, or liqueur syrup), nuts, candied peel, and raisins or from medicinal substances. The coating is prepared in dredgers (slanted, slowly revolving bowls); the center is alternately dredged in sugary syrup and confectioners’ sugar.
