Harvey, Frederick Henry (1835–1901) restaurateur; born in London, England. He emigrated to the U.S.A. about 1850. He expanded his first railroad depot restaurant in Topeka, Kans., (opened in 1876) into a chain of restaurants, hotels, and dining cars associated with the new Atchison, Topeka, and Santa Fe Railroad. Harvey's restaurants were famous for fresh linens, fine food, and highly trained waitresses known as "Harvey Girls." How to thank TFD for its existence?
