Laccase and protease enzymes can lead to better breadmaking performance and improve the texture of finished bread.
We recently identified laccase and succinic acid from anaerobic compost and Figure 5 shows how they were correlated to the growth of Trichoderma.
Laccase has now been shown to equal the catalytic performance of platinum when used to speed up the reactions on the electrode of a fuel cell.
