Lactobacterium Bulgaricum

a large nonsporulating bacterium, shaped like a rod, which belongs to the group of lactic acid bacteria. At temperatures of 45–50° C it quickly turns milk. The bacterium forms lactic acid and some volatile acids and gives off lactose and glucose. It is used to obtain sour milk.
