(organic chemistry)
Any of the fatty-acid glycerol esters where only one acid group is attached to the glycerol group, for example, RCOOCH2CHOHCH2OH; examples are glycerol monostearate and monolaurate; used as emulsifiers in cosmetics and lubricants.

Monoglycerides of fatty acids have been widely used as dough additives to retard staling in the finished loaf.
The Tongue Gland releases Lingual Lipase, the digestive enzyme that initiates the Triglyceride Digestion process causing them to dissolve into Fatty Acids and Monoglycerides.
It is comprised of at least one anionic, nonionic or amphoteric surfactant at a concentration of 5-50% by weight calculated to total composition, at least one monoglyceride having 12-22 carbon atoms in fatty acid moiety and at least one compound comprising a silicone polymer, a quaternary ammonium group and a polyether group in its molecule.
