Mycoderm
a film or foam on the surface of fermenting liquids (wine, beer). It is formed by yeastlike Fungi Imperfecti of the aerobic group. There are approximately ten species, mostly of the genus Mycokluyveria. These fungi do not produce fermentation but oxidize alcohol and lower the quality of wine and beer.
