Périgueux (pārēgö`), city (1990 pop. 32,848), capital of Dordogne dept., SW France, on the Isle River. A commercial center and transportation hub, it is famous for the pâtés that are its chief exports. The city's major manufactures are tobacco products, chemicals, and leather goods. Périgueux was the ancient Vesumna or Vésona of Gallic Petrocorii (see Gaul Gaul (gôl), Lat. Gallia, ancient designation for the land S and W of the Rhine, W of the Alps, and N of the Pyrenees. ..... It passed (1204) to Philip II of France, was taken (1356) by the English, was regained (1454) by France, and became (16th cent.) a Protestant stronghold. | This is not a true sauce Perigueux, the classic French accompaniment to Beef Wellington, in that a starch-thickened beef broth (jus lie) is used rather than brown sauce. The apartment block is set on a flat, wedge-shaped parcel of land adjacent to an area of open flat ground which borders the route de Perigueux immediately to the east of the town centre, and which has no buildings of any distinction nearby.
