(organic chemistry)
C6H7KO2A crystalline compound, more soluble in water than in alcohol; decomposes above 270°C; used to inhibit mold and yeast growth in food.

Although it doesn't come close to freshly grated Parmesan available in the refrigerator section of stores today (or grating your own), the canister package label notes that the product contains no fillers - only real Parmesan cheese (and cellulose powder to prevent caking and potassium sorbate to protect flavor) - and it should be refrigerated after opening.
Ingredients included: vegetable shortening, sugar, enriched bleached flour, water, dextrose, soy flour, cornstarch, mono- and diglycerides, sodium stearoyl lactylate, soy lecithin, salt, natural and artificial flavors, modified wheat starch, baking soda, sodium acid pyrophospate, monocalcium phosphate, sodium propionate, potassium sorbate, beta-carotene, fumaric acid, and agar.
Apply potassium sorbate topically-1 tablespoon dissolved in 1 quart of warm water.
