If you choose an apple tree on one of the modern dwarfing rootstocks such as M9 or M27, the tree will only ever get to 3 metres (10') maximum, allowing you to have a good crop but without the need to spend hours on a ladder pruning and harvesting - you can do most of it from the ground and the tree will not take the garden over.
Apple trees are grafted onto various rootstocks, which produce different sized trees ranging in size from two to four metres tall.
Be aware that trees with dwarfing rootstocks need a lot of looking after, so in most cases "semi-dwarfing" is best.
