Salad Burnet

Salad Burnet 

(Sanguisorba minor), a perennial plant of the family Rosaceae; it is sometimes included in the genus Poterium. The leaves are pinnate, with the lower ones in a rosette. The small, greenish flowers, which subsequently turn brown, are in compact heads. The salad burnet grows in Western Europe, the southern European USSR, and, occasionally, the central European USSR. It is found in dry meadows, on rocky slopes, along roads, and in wastelands. Sometimes it grows as a weed among crops. The salad burnet is an important pasture plant, especially in regions with mild winters. The young leaves, whose odor resembles that of a cucumber, are occasionally used in salads in place of lettuce. Sometimes Poterium polygamum (more correctly Sanguisorba minor muricata) is called salad burnet.
