Saperavi

a Georgian late-season wine grape.

The Saperavi is cultivated in the Georgian SSR (mainly in Kakhetia), Azerbaijan SSR, Armenian SSR, Middle Asian republics, Kazakh SSR, Moldavian SSR, Ukrainian SSR, Stavropol’ and Krasnodar krais, and RSFSR. The bunch is of medium size, broadly conical, shouldered or branched, and loose or moderately compact. The berry is average in size (length, 13–20 mm), oval, dark blue, with a heavy waxy bloom. The flesh is juicy and diffuse, and the juice is weak in color. The yield is 8–10 tons per hectare. Saperavi is used in the production of red table, dessert, and fortified wines.
