On the kitchen table awaiting their turn in the preserving pan, segmented Seville oranges are piled high, jostling with glass jars ready to be filled with the syrupy, golden liquid bubbling like molten lava.
To make Seville Orange Bread and Butter Pudding, you will need about eight slices of medium sliced white bread, crusts removed and cut into triangles, a couple of handfuls of raisins, 4-5 Seville oranges, some melted butter, 4 egg yolks, 4 whole eggs, 150g (5oz) caster sugar, 240ml ( 1/2 pint) of cream, 240ml ( 1/2 pint) of milk and the seeds of one vanilla pod (optional).
Choosing the Seville oranges, the juniper and all the other botanicals to provide the right balance is the most skilful part of my job.
