Wheeler, Ruth (1877–1948) physiological chemist; born in Plains, Pa. She taught high school science before earning a Ph.D. at Yale and becoming a professor of chemistry, nutrition, and physiology at Vassar (1926–44). She headed the American Red Cross nutrition service (1917–32) and wrote the American Red Cross Textbook on Food and Nutrition (1927).
