Galactosans

C₆H₁₀O₅, galactose anhydrides. Both α- and β-forms are known; the former convert almost completely into the more stable configuration (the β-isomer). Galactosans are rapidly hydrolyzed by heating with dilute acids, forming galactose. They polymerize readily and are used in making rare sugars. They are secreted from many plant tissues.
