Organic acid in which the =NH group is attached to one or two carbons; for example, acetic acid, NH(CH2COOH)2.

The high melting point in this study might be associated with the high content of imino acids (Pro and Hyp) (Kasankala et al., 2007).
The non-tannin fraction contains phenolic compounds (monomeric flavonoid compounds and hydroxycinnamic acid derivatives), carbohydrates (glucose, fructose, saccharose and hydrocolloidal gums) and nitrogen compounds (such as amino and imino acids).
