Labuza, Theodore P.
(1940– ) food scientist; born in New York City. He taught food engineering at the Massachusetts Institute of Technology (1965–71), his alma mater, before going to the Food Science and Nutrition Department at the University of Minnesota (1971). He wrote 12 textbooks, hundreds of articles, and edited the Journal of Food Processing and Preservation (1976–84). During Desert Storm, he worked for the Department of Defense task force on food quality problems associated with a hot environment.
