Their topics include exploring the capacity of halophilic microorganisms to synthesize exopolysaccharides with interesting properties, exopolysaccharide production by thermophilic microorganisms, drug delivery systems based on microbial exopolysaccharides, fructans as natural bioactive cosmeceutical ingredients, the molecular modification of levan and biotechnological applications of its derivatives, and cloning and partially characterizing an extracellular dextransucrase coding region (DSRR-V) from Leuconostoc citreum M-3.
Kefir grains, used to make the beverage, consist of a symbiotic mix of lactic and acetic acid bacteria (eg Lactobacillus, Lactococcus, Leuconostoc, and Streptococcus spp.) and yeasts (eg Kluyveromyces, Saccharomyces, and Torula).
In this vein, their intestine is expected to be colonized by probiotics, such as Lactobacillus paracasei, Lactobacillus delbrueckii lactis, Lactobacillus lactis lactis, Leuconostoc, and Bifidobacterium (10%).
Two of the 3 isolates were further identified using the Vitek 2 system and were found to be Leuconostoc mesenteroides ssp.
However, other than vancomycin resistant enterococci (VRE), all Gram positive cocci that are resistant to vancomycin are probably Leuconostoc, Vagococcus, or Pediococcus.
In addition to Lactobacillus, several other acids-producing bacteria appear in the early stages (d 5 and d 10), and decrease or disappear in subsequent periods, namely Pediococcus, Lactococcus, Weissella, and Leuconostoc. This situation was demonstrated in several studies [5, 25].

Tia Alkazaz, Active Micro Technologies, detailed the benefits of three natural antimicrobial peptides, Leuconostoc radish root ferment filtrate, Lactobacillus ferment, and Lactobacillus (and) Cocos nucifera (coconut) fruit extract, in relation to the skin microbiome.
