Leveille, Gilbert A.
(1934– ) food scientist; born in Fall River, Mass. He researched protein and lipid metabolism for the U.S. Army Medical Research and Nutrition Laboratory (1960–66) before joining the faculty at the University of Illinois: Urbana (1966–71) where he continued researching obesity. In 1971 he moved to Michigan State University (1971–80) where he established the Department of Food Science and Nutrition. He joined General Foods Corporation (1980–86) and then the Nabisco Foods Group (1986). His books include Nutrients in Foods (1983) and The Setpoint Diet (1985).
