meadow salsify
Another dandelion-type plant with yellow flowers and fluffy round seed heads, but the leaves look more like grass. The whole plant is edible- root, stem, leaves and flower. The young shoots are best. Eat stems and leaves when they are still tender. Can be steamed like asparagus. Many people think this stuff is simply a type of grass growing, but look closer.
