(biochemistry)
A diastatic enzyme found in saliva which catalyzes the hydrolysis of starch to dextrin, maltose, and glucose, and the hydrolysis of sucrose to glucose and fructose. Also known as ptyalase; salivary amylase; salivary diastase.
