If you want to "do it yourself" you can change gear manually with the gear shift - which gives you the functionality of a sequential racing gearbox - or use the steering wheel mounted paddles to change gear Formula 1-style.
The worry was whether he could change gears on that heavy ground, but obviously he's a very good horse.
Everyone takes one hand off the wheel at some point quite legitimately when they change gear, roll down the window or change the heater settings.
