NZ a shop that remains open outside normal trading hours 3. a room or building where milk and cream are stored or made into butter and cheese dairy [′derĀ·ē] (agriculture) A farm concerned with the production of milk. (food engineering) An establishment where milk products are made. milk house Before the 19th century, a small subsidiary structure in which milk and other dairy products were stored at a lowered temperature with cooling usually provided by slowly running cold spring water or the runoff from an icehouse; typically had overhanging eaves to shade it, and double walls and ceiling filled with a thermal insulator, such as sawdust; commonly had a concrete floor to promote cleanliness and louvers for ventilation; was separated from the barn for reasons of sanitation.
