Cos, Greece: see Kós Kós , Lat. Cos, island (1991 pop. 26,379), 111 sq mi (287 sq km), SE Greece, in the Aegean Sea; 2d largest of the Dodecanese, near the Bodrum peninsula of Turkey. Although it rises to c.2,870 ft (875 m) in the southeast, the island is mostly low-lying.

Cos a Greek island in the Aegean Sea, part of the Southern Sporades, near Asia Minor. Length, approximately 40 km; width, up to 10 km; area, 267 sq km. Hilly plains and plateaus predominate; in the east there are low mountains, reaching an elevation of 846 m. The vegetation is primarily of a Mediterranean shrub type. No references found | 2 large Cos lettuces, or similar (Little Gems work well) 60g Walnuts (French or Californian are the best, and make sure they're not old, as they can be very bitter) 2 large ripe Williams pears 2 Sticks celery 150-200g Roquefort cheese, diced For the dressing: 150ml Walnut oil 50ml Olive oil 3 tbsps cider vinegar 2 tsp mustard a teaspoon of sugar S&P A teaspoon of poppy seeds First, make the dressing. My cos lettuces are the best ever, and really easy to grow. SERVES 4 INGREDIENTS 1 tablespoon of chopped rosemary 1 clove garlic, crushed 3 teaspoons redcurrant jelly 400g lamb fillets, trimmed of fat 1 tablespoon olive oil 12 green olives 100g low fat feta 2 baby cos lettuces, outer leaves discarded, leaves separated 1 bulb fennel - finely sliced 1 and half tablespoons of oil-free balsamic dressing METHOD In a small bowl, mix rosemary, garlic and redcurrent jelly. |
