Fleshing 

in leather and fur manufacture, the process of removing the subcutaneous layer, or flesh side, from the hide.

Fleshing is generally done on a fleshing machine, the principal working element of which is a steel roller with spiral blades. The operating principle of the machine is based on the difference in strength between the middle layer of the hide, or derma, and the flesh side (the less strong).
