Halvah

Halvah 

a confection made from crushed roasted oil-bearing seeds and caramel beat together with a foaming substance. Depending upon the type of oil-bearing seeds, one can produce tahini halvah (from sesame seeds), peanut halvah, sunflower-seed halvah, soy halvah, walnut halvah, and mixed halvah (from several types of seeds). The foaming substance is a decoction of soapwort or licorice root. When the caramel is beaten with the root decoction, a porous mass saturated with air is formed, to which the crushed seeds are then added. Vanilla, cocoa powder, or raisins may be added. Halvah is an Oriental delight (seeORIENTAL DELIGHTS). It contains 2.27 to 2.3 mJ (545 to 555 kcal) per 100 g.
