Corn Salad 

a number of plant species of the genus Valerianella of the family Valerianaceae. The plants, which include V. olitoria, V. eriocarpa, and V. dentata, are cultivated primarily in Western Europe and the United States. The leaves are used in salads.

To cook along live with Gordon's three-course meal, you will need the following ingredients and utensils: INGREDIENTSFew sprigs of thyme; approx 20g bunch of basil; approx 10g bunch of dill; 2 baby gem lettuce, washed; 40g lamb's lettuce, washed; 750g small new potatoes; 1 large - or 2 smaller - head of broccoli; 2 garlic cloves; 500g rhubarb; 2 to 3in piece of ginger; 1 apple such as Granny Smith or Bramley; 1 lemon.
Mild leaves such as spinach and lamb's lettuce benefit from a simple lemony dressing.
