Corn Salad 

a number of plant species of the genus Valerianella of the family Valerianaceae. The plants, which include V. olitoria, V. eriocarpa, and V. dentata, are cultivated primarily in Western Europe and the United States. The leaves are used in salads.

There’s a refreshing Lebanese-style fattoush salad of mâche and radishes with mint and basil vinaigrette, topped with a long curled sesame crisp; in stark contrast, a flat-tasting cucumber salad seemed to have languished too long in the refrigerator.
Roasted beets sautéed in lemon agrumato oil (made by crushing together lemons and olives) are garnished with leaves of mâche and mullet bottarga (preserved roe): a lovely combination.
The cannelloni was as baroque a pasta dish as you can imagine, assembled with veal, porcini mushrooms and fontina, sprinkles of hardboiled egg yolk and mâche, and a black truffle vinaigrette.
