the residue obtained after squeezing the juice from grapes, grape pulp, berries, or fruit. When using screw presses the total quantity of marc (seeds or skin) may attain 21 percent of the processed grapes. The marc can be white or red, sweet (nonfermented) or fermented. Tartaric acid and ethyl alcohol are obtained from marc. Grape seed oil and oenotannin are extracted from grape seeds. The dried skin is used to feed livestock or as fertilizer. A red eno dye used in confectionery is obtained from red marc.
