Spontaneous separation of a liquid from a gel or colloidal suspension due to contraction of the gel.

E[acute accent]The new GENU(R) pectin types LM X-213-04 and LM X-214-04 resolve problems related to gel texture and syneresis that typically occur when pectins are used for jams and jellies with soluble solids in the range 5 - 30%.
This process improves the vegetable color, flavor, texture, reduces clumping and eliminates syneresis typically found in conventional IQF vegetables.
