zein [′zēยทən]
(materials) A combustible, white to yellowish protein powder derived from corn; insoluble in water, soluble in dilute alcohol; used in inks, fibers, microencapsulation, and coatings for paper and food. Zein a protein of plant origin, in the prolamines group; it is present in maize grains (Zea mays). Its molecular weight is about 40,000. In shape zein crystals resemble needles or short threads. Zein is poorly soluble in water; it is soluble in 60–80 percent ethanol. It occupies a position between globular and fibrous proteins. Zein is made up of 18 of the 20 known amino acids, glycine and lysine being absent. On hydrolysis zein yields a considerable amount of glutamic acid (26.9 percent), leucine (21.1 percent), and proline (10.53 percent).
