Podem ser encontradas em diversas plantas (leguminosas, chas, espinafre, beterraba, alho e berinjela) e o teor varia em funcao da resistencia da planta a herbivoria, uma vez que a saponina confere sabor amargo a planta (ANNONGU et al., 1996).
As frutas e hortalicas, em geral, sao boas fontes de potassio, com destaque para a banana (Musa spp.) (1.250mg 100 [g.sup.-1]/ peso seco), couve (Brassicaoleracea) (4.478mg 100 [g.sup.-1]/peso seco) e espinafre (Spinaciaoleracea) (5.600mg 100 [g.sup.-1]/peso seco) (TACO, 2011).
