Tokay

a dessert wine produced in Hungary from grapes of the white varieties Furmint and Hárslevelü. Alcohol content ranges from 6 to 16 percent by volume, and sugar content ranges from 0 to 25 percent. The wine is prepared by fermenting a must with a high sugar content (30–60 percent); the must is obtained from sun-cured grapes and is treated with the microscopic mold Botrytis cinérea. After clarification the wine is aged from four to eight years in cellars at a temperature of 9°-ll°C and a humidity of 85–90 percent. Under these conditions the presence of the mold Cladosporium cellaroe is necessary. The best-known Tokay wines are Aszu, Tokaji Eszencia, and Szamorodni.

In the USSR, Tokay wines are mainly produced on the southern coast of the Crimea and in the Uzbek SSR. During preparation, alcohol is added to the must.
