dried whole unpitted apricots. The fruits are sometimes fumigated with sulfur. Only whole, healthy, unspoiled fruits are used for uriuk. Sulfur-treated fruits range in color from light orange to reddish brown, and unsulfured fruits range from light brown to dark brown. Uriuk has a moisture content of 16–18 percent. The content of SO2 in sulfur-treated uriuk should not exceed 0.01 percent. Uriuk retains 20 percent of the mass of the fresh fruit.
