a sweet, milky white sap tapped from the trunk of the date palm and used as a refreshing beverage. The palm is clipped when it begins to age and its yield decreases (after 80 to 90 years). A notch is made in the stem at the top and a tube is inserted through which the toddy flows for two to three months. After one day’s exposure to the air, the sap ferments into a wine; after another two or three days, it turns into vinegar.
