Sparkling Wines

grape table wines that are saturated with carbon dioxide by means of a second fermentation (in bottles, in individual hermetic tanks, or in a system of tanks) of sugar (saccharose) or grape must that is added to the wine. Sparkling wines are prepared from special white or red varieties of grapes. Among the sparkling wines in the USSR are Sovetskoe shampanskoe, Krasnoe igristoe, Tsymlianskoe, Sevastopol’skoe igristoe, and Muskat igristyi. Sparkling wines can also be made by using up unfermented sugar at the first fermentation stage (for example, the Georgian wines Chinuri, Chkhaveri, Atenuri, and Mtsvane). The wines of the Champagne region of France and the sparkling muscatels of Italy, such as Asti Spumante, are other examples of sparkling wines.
